Summer In January

It’s hard to believe that just last week my friend Sarah had to come dig me out of my driveway (literally). Nashville, TN was hit pretty hard by snow storm Jonas, urging children and adults alike to take advantage of snow-related activities. However, this weekend my friends and I have enjoyed 70 degree temperatures and a return of sunny days. The snow covered streets of less than seven days ago are just a distant memory. Yet, the wonderful Skyler Levine did take the time to experiment with the snow in her kitchen. Below is a delicious recipe for snow ice cream. So, enjoy it if winter is taking place in your state or even if it is summer in January like in Nashville, stash this away for your next snow day. Have a wonderful week!!

Snow Ice Cream

So, this past weekend Nashville got hit with a snow storm much like many other locations around the U.S.  The difference is that as a city, we tend to shut down in severe weather because we are not equipped with salt trucks and other common safety features used to combat winter weather. Because of this, I was involuntarily trapped inside for a few days without access to a grocery store. This was actually kind of fun as it forced me to use up whatever ingredients I already had in the refrigerator. One of the things I whipped up was a vegan apple crisp (recipe coming soon!). Having newly run out of my favorite coconut milk ice cream, I had to improvise a bit. Ever heard of “snow” ice cream? Maybe something your mother made for you as a kid on snow days? Well, here is a healthy take on the dish for a fun and seasonal treat!

Snow Ice Cream

And yes, it’s safe to eat!

Yields 2 servings

1 ½  cups of snow (take from a clean looking spot, or if its snowing set the bowl out to collect it fresh! Don’t take the yellow snow!)

1 ½ tsp. vanilla extract

1 TBSP grade B maple syrup

2 – 3 TBSP almond milk

Directions: Combine all ingredients in a medium mixing bowl, judging the amount of almond milk used based on the desired consistency. Share with your snow-buddy, and enjoy this healthy treat!
